Zucchini Feta Bars

These savory Zucchini Feta Bars are light, cheesy, and full of flavor. Made with shredded zucchini, crumbled feta, and fresh herbs, they make a perfect snack, appetizer, or lunchbox treat.

Ingredients
  

  • 3 medium zucchini shredded, squeezed dry
  • 1 cup feta cheese crumbled, full-fat for best flavor
  • 3 large eggs helps bind the bars
  • 2 tbsp olive oil adds moisture
  • 0.5 cup all-purpose flour or oat flour for a healthier twist
  • 1 tsp baking powder light, fluffy texture
  • salt & black pepper to taste, adjust seasoning
  • 2 tbsp fresh herbs dill, parsley, or mint (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a 9x9-inch baking pan.
  2. Grate the zucchini and squeeze out excess moisture using a clean towel.
  3. In a mixing bowl, combine zucchini, feta cheese, eggs, olive oil, flour, baking powder, salt, pepper, and fresh herbs if using. Stir until well combined.
  4. Transfer mixture into prepared baking pan and spread evenly.
  5. Bake for 30–35 minutes, or until golden and set in the center.
  6. Cool slightly before slicing into bars. Serve warm or at room temperature.

Notes

These bars taste great warm or cold and store well in the fridge for 3–4 days. Try adding grated carrot or spinach for extra veggies.
