Ingredients
  

For the Cheesecake Filling
  • 8 oz cream cheese softened
  • 3 tbsp powdered sugar or sweetener your choice
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest for brightness
For the Strawberries
  • 20-24 large strawberries
  • 2-3 tbsp crushed graham crackers or almond flour for topping
  • melted chocolate optional, for drizzling
  • finely chopped nuts or coconut flakes optional

Method
 

  1. Rinse strawberries under cold water and pat dry thoroughly. Use a paring knife to remove the stems and hollow out the center of each berry. Set the prepared berries on a tray.
  2. In a medium bowl, combine the softened cream cheese, powdered sugar, vanilla extract, lemon juice, and lemon zest. Beat with a hand mixer until smooth and creamy. Adjust sweetness to taste.
  3. Transfer the cheesecake mixture to a piping bag or use a small spoon. Fill each strawberry with a generous amount of the cream cheese mixture.
  4. Sprinkle the filled strawberries with crushed graham crackers or almond flour. Drizzle with melted chocolate or top with nuts if desired.
  5. Refrigerate the tray for at least 30 minutes before serving. Serve chilled for best flavor and texture.
