Ingredients
  

Cake
  • 2 eggs lightly beaten
  • 1 cup applesauce
  • 3 tbsp olive oil
  • 1 tsp vanilla extract
  • 1.25 cups all-purpose flour sifted
  • 2 tsp baking powder
  • pinch of salt
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • pinch of ground ginger
  • pinch of allspice
  • 0.66 cup sugar
  • 1.5 cups Honeycrisp apples peeled and chopped
Cinnamon Icing
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 0.25 tsp cinnamon

Method
 

  1. Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together eggs, applesauce, olive oil, and vanilla extract until smooth.
  3. Sift in flour, baking powder, salt, cinnamon, nutmeg, ginger, and allspice. Add sugar and mix until just combined.
  4. Gently fold in chopped apples to evenly distribute them throughout the batter.
  5. Pour batter into prepared pan and spread evenly. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow cake to cool completely on a wire rack. Poke a few holes on top and drizzle with cinnamon icing.
  7. To make the icing, whisk together powdered sugar, milk, and cinnamon until smooth. Adjust consistency as needed and drizzle over cooled cake.

Notes

For extra texture, add ½ cup chopped walnuts or pecans. The cake keeps well covered at room temperature for up to 2 days or refrigerated for up to 5 days.
