Ingredients
  

Brownie Batter
  • 1 small zucchini chopped into medium chunks
  • 1 large egg
  • 1/4 cup cacao powder unsweetened
  • 1 cup rolled oats use gluten-free if needed
  • 2 tbsp olive oil or coconut oil
  • 1/2 cup coconut sugar increase to 3/4 cup for sweeter brownies
  • 1 tsp vanilla extract
Mix-ins & Topping
  • 1/3 cup chocolate chips use dairy-free for vegan option
  • flaky sea salt optional, for topping

  • 8×4-inch loaf pan
  • Parchment paper

Method
 

  1. Step 1: Prep the Oven and Pan
    Preheat oven to 350°F (176°C). Line an 8×4-inch loaf pan with parchment paper.
  2. Step 2: Blend the Batter
    In a food processor or blender, combine zucchini, egg, cacao powder, oats, olive oil, coconut sugar, and vanilla. Blend until smooth.
  3. Step 3: Add Chocolate Chips
    Stir in chocolate chips, reserving some for topping if desired.
  4. Step 4: Bake
    Pour batter into prepared loaf pan, spread evenly, and top with extra chocolate chips. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  5. Step 5: Cool & Slice
    Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

These brownies are naturally moist from the zucchini—no one will guess they’re made with veggies! Store in an airtight container at room temperature for 2 days or refrigerate for up to 5 days. Can be frozen for longer storage.
