  • 2 tbsp cacao powder
  • 3 cups whole milk
  • 2 eggs
  • 0.33 cup granulated sugar
  • 0.25 cup all-purpose flour
  • 2 tbsp arrowroot powder (or cornstarch)
  • 0.25 tsp salt
  • 0.75 cup dark chocolate chips
Topping
  • 1 egg
  • 2 tbsp granulated sugar
  • 2 tbsp water
  • 2 tsp cacao powder

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9-inch deep-dish pie plate with butter, then sprinkle lightly with cocoa powder.
  2. Warm the milk in a saucepan over medium heat until steaming, stirring occasionally.
  3. In a bowl, whisk eggs, sugar, flour, arrowroot, 2 tbsp cocoa powder, and salt until smooth.
  4. Slowly whisk 1 cup of warm milk into this mixture to temper the eggs.
  5. Return mixture to saucepan, whisking over medium heat until thickened, 2–5 minutes. The filling should have a pudding-like consistency.
  6. Remove from heat, stir in butter and dark chocolate chips until smooth.
  7. Pour filling into prepared pie pan and smooth surface.
  8. Whisk together egg, sugar, water, and cocoa powder for topping. Brush gently over the pie.
  9. Bake for 45–50 minutes, until set but slightly jiggly. Cool completely before serving.

Notes

Best served chilled or at room temperature. For extra indulgence, serve with whipped cream or a dusting of powdered sugar.
