Ingredients
  

  • 2 lbs wild salmon 1 large side or 2 fillets
  • 0.5 tsp salt
  • black pepper to taste
  • 0.25 cup panko breadcrumbs
  • 0.25 cup freshly grated parmesan cheese packed
  • 2 tbsp fresh chopped dill or parsley
  • 2 tbsp sesame seeds
  • 4 cloves garlic finely minced or grated
  • 3 tbsp olive oil

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat salmon dry with paper towels. Season with salt and pepper. Place skin-side down on the baking sheet if skin is intact.
  3. In a bowl, combine panko, parmesan, herbs, sesame seeds, garlic, and olive oil. Stir until mixture is evenly coated.
  4. Spread breadcrumb mixture over salmon, pressing gently so it sticks.
  5. Bake for 12–18 minutes, depending on thickness, until salmon flakes easily and crust is golden.
  6. Slice into 6 portions and serve hot or warm with your favorite sides.

Notes

For an extra kick, add lemon zest to the breadcrumb mixture. This salmon pairs beautifully with roasted vegetables or a fresh salad.
