Cottage Cheese Pizza Crust (No Flour)

Ingredients
  

  • 1 cup cottage cheese full-fat or low-fat
  • 2 eggs large
  • 1 cup mozzarella cheese shredded
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Equipment

  • Blender or food processor
  • Baking sheet or pizza stone
  • Parchment paper
  • Spatula

Method
 

  1. Preheat oven to 425 °F (220 °C). Line a baking sheet or pizza stone with parchment paper.
  2. In a blender or food processor, combine cottage cheese, eggs, shredded mozzarella, garlic powder, oregano, salt, and pepper. Blend until smooth and uniform.
  3. Pour the batter onto parchment and spread into a 10–12 inch round crust about 1/4-inch thick.
  4. Bake crust for 10–12 minutes until edges turn golden and center is set.
  5. Remove from oven, top with sauce, cheese and your favorite toppings.
  6. Return to oven and bake for 8–10 minutes more until toppings are melted and crust is crispy.
  7. Slice and enjoy immediately. Store leftovers in refrigerator up to 3 days; reheat in oven or toaster oven.

Notes

For extra crispness, flip crust halfway through first bake. You can add herbs or nutritional yeast to the batter. Crust is best eaten same day—cheese can soften over time.
