Cottage Cheese Flatbread

This simple, high-protein flatbread is made with just cottage cheese, eggs, and a few optional seasonings. It’s great for wraps, dipping, or as a base for mini pizzas!

Ingredients
  

Flatbread Batter
  • 1 cup cottage cheese full-fat, low-fat, or fat-free
  • 2 large eggs
  • 3/4 tsp garlic powder optional
  • 1 tsp Italian seasoning optional
Topping
  • oregano to sprinkle on top before baking (optional)
  • cooking spray for greasing parchment

Method
 

  1. Step 1: Blend the Ingredients
    Add cottage cheese, eggs, garlic powder, and Italian seasoning to a blender or food processor. Blend until smooth, about 20–30 seconds. Scrape down sides if needed.
  2. Step 2: Prep Your Pan
    Line a small baking sheet with parchment paper and lightly grease it with non-stick cooking spray.
  3. Step 3: Pour & Spread
    Pour the mixture onto the prepared baking sheet and use a spatula to spread evenly into a flat shape, about ¼ inch thick.
  4. Step 4: Season & Bake
    Sprinkle with oregano or other herbs. Bake in a preheated 350°F (176°C) oven for 30–35 minutes, or up to 50 minutes for thicker flatbread, until edges are browned and top is set.
  5. Step 5: Cool & Slice
    Let flatbread cool completely on the tray. Slice and serve as desired.

Notes

Customize the seasoning with chili flakes, onion powder, or everything bagel seasoning. Store leftovers in the fridge up to 3 days or freeze for later use. Reheat in a toaster oven for best texture.
