- Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 2–3 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add ground beef, breaking it apart with a spoon. Cook until browned and no longer pink, about 6–7 minutes. Drain excess fat if needed.
- Stir in chopped cabbage and cook for 5 minutes, until slightly wilted.
- Add diced tomatoes, paprika, Italian herbs, salt, and pepper. Stir, cover, and let simmer for 10 minutes until the cabbage is tender.
- Sprinkle shredded cheese evenly on top. Cover skillet for 2–3 minutes, until cheese is melted and bubbly.
- Serve hot, straight from the skillet.
Notes
Make it lighter by swapping beef for ground turkey or chicken. Spice it up with red pepper flakes or jalapeños.
